Behind the window of one of the oldest shops in Paris, the pastry chef and ice-cream maker is playing the role of taste agitator-in-chief. Behind the large lime-green wood-framed windows a succession of delicacies are displayed. Mirrors and cupboards on the walls, and old counter on a cement tiled floor, the original mouldings on the ceiling, the imagery associated with the boutiques of the past come to life again in a thoroughly modern space that makes the past sparkle in the present.
