Mur.Mur. has renovated this space as it would have been in the 14th century by incorpora- ting a series of elements in their basic state: geo- metric wooden structures and a bar made from Burgundy stone. The parquet is original, the walls in Paris stone and redbrick brought back to their original state. Seated on the hotch potch of Scan- dinavian chairs in different woods, the cooks can be seen at work behind a glass panel where they concoct dishes using seasonal products: cod llet in a herb crust with a turmeric avoured carrot purée, cabbage stuffed with veal and once a month a traditional Sunday roast, with roasted meats, potatoes and a selection of vegetables.
