In giving the design of his second restau- rant to the Pritzker Prize winning architect Rem Koolhaas (assisted by Clément Blanchet), the chef Inaki Aizpitarte is extending his hold on the avenue Parmentier. Just a couple of steps from the Chateaubriand, the tapas available at the bar are an indicator of the standard of food to expect. The mirrored walls re ect the passing street-life, the Carrara marble interior covers 60sqm and is lit by candlelight with ashes of spotlights on the oor and ceiling. At night it’s like an urban quarry where cookery becomes theatre.
