The new Sushi bar of the Vaconsin sisters, Florence and Marie, sets sail on the Rue du Sabot for a voyage between Japan and California. Inspired by the Californian tradition of the Sushi bar, the designer Gabriel Pistre delivers a decor that is culturally colourful and imaginative in the image of the culinary inventions of chef Luu. He mixes raw and noble materials, old and new, combining the traditional lantern with pop neon. Blueberry, a reference to the film “My Blueberry Nights” by Wong Kar Wai, proposes recipes revisited with diverse ingrediants – yuzu, Thai chives, Flying Fish eggs – and uniting the rigour of Japanese sushi with the fantasy of Californian makis.
